Ingredients

Olive oil

1 tsp

Shortcut bacon

115 g, (buy 125g) fat trimmed, thinly sliced

Brussels sprouts

800 g, (baby), thickly sliced lengthways

Orange rind

1 tsp, (5cm piece), cut into thin strips

No added sugar orange juice

¼ cup(s), (60ml)

Fresh tarragon

2 tbs, coarsley chopped

Hazelnuts

2 tbs, coarsley chopped

Instructions

  1. Heat the oil in a large non-stick frying pan over medium-high heat. cook the bacon, stirring, for 2 minutes or until crisp. add the Brussels sprouts and cook, tossing gently, for 5 minutes or until tender.
  2. Add the orange rind, orange juice, tarragon and bacon to the sprouts and combine. season with salt and pepper. Transfer to a serving bowl. Serve sprinkled with hazelnuts.
