Ingredients

Frozen broad beans

500 g

Lemon zest

2 tsp, finely grated, plus extra to serve

Fresh mint

2 tsp, finely chopped, plus extra leaves to serve

Bruschetta (WW recipe)

4 slice(s)

Reduced fat feta cheese

120 g, crumbled

Lemon(s)

1 medium, wedges to serve

Instructions

  1. Cook beans in a large saucepan of boiling water for 2 minutes. Drain, cool slightly, then peel. Coarsely mash beans in a medium bowl. Season with salt and pepper. Stir in zest and mint.
  2. Spread bean mixture over bruschetta. Sprinkle with feta, extra lemon zest and mint leaves. Serve with lemon wedges.
