Tender broccolini and snow peas sprinkled with crunchy hazelnut and sourdough crumbs


Ingredients
Oil spray
1 x 3 second spray(s)
Hazelnuts
¼ cup(s), chopped
Dried breadcrumbs
20 g, sourdough
Broccolini
2 bunch(es)
Snow peas
200 g
Fresh lemon rind
1 tsp, finely grated
Lemon juice
1 tbs
Olive oil

Lightly spray a large non-stick frying pan with oil and heat over medium heat. Add hazelnuts and breadcrumbs and cook, stirring, for 2–3 minutes or until golden.

Boil, steam or microwave broccolini and snow peas until just tender. Drain and place in a serving dish. Combine lemon rind, lemon juice and olive oil in a small bowl and drizzle over vegetables. Sprinkle with hazelnut crumbs. Serve.
