Baby spinach leaves
Light cheddar cheese

Extra light tortilla
2 individual, (2x45g/20cm)
¼ cup(s), (60g)
- Lightly spray a medium non-stick frying pan with oil and heat over medium heat. Break 1 egg into the pan and cook for 1 minute. Top with half the spinach and half the cheese, then place a tortilla on top. Cook for 2–3 minutes or until egg is cooked to your liking and tortilla softened.
- Turn out onto a plate, fold tortilla in half, then cut into wedges if you like. Repeat with remaining egg, spinach, cheese and tortilla. Serve with a dollop of tomato relish.
TIP: If you like, you can substitute the baby spinach in this breakfast tortilla with baby rocket leaves instead.
