Ingredients

Banana(s)

1 medium, (ripe), chopped

No added sugar apple puree

½ cup(s), (125ml)

Canola oil

1½ tbs

Egg(s)

2 medium

White self-raising flour

2 cup(s), (300g)

Fresh blueberries

1½ cup(s), (240g)

Instructions

  1. Preheat oven to 190°C. Line a 12-hole ⅓ cup (80ml) capacity muffin tray with paper cases.
  2. Process banana and apple purée in a food processor until smooth. Add oil and eggs. Pulse until well combined.
  3. Stir flour and banana mixture in a medium bowl until combined. Fold through berries. Divide mixture evenly among prepared muffin holes. Bake for about 15 minutes or until a skewer inserted into the centre of muffins comes out clean. Serve warm or at room temperature.
