This gourmet steak sandwich is like no sandwich you have ever tried before with a delicious, homemade, chunky tomato sauce and roasted capsicum. Yum!

Ingredients

Olive oil

1 tbs

Brown onion

1 medium, finely chopped

Garlic

1 clove(s), crushed

Tomato(es)

3 medium, chopped

Vinegar

1 tbs, (cider)

Beef fillet (tenderloin), raw

192 g, (Buy 2x120g), fat trimmed

Ciabatta bread

350 g, halved lengthways

Rocket

1 cup(s), (1 bunch)

Roasted capsicum, not in oil

cup(s), (67g), not in oil

Instructions

  1. Heat oil in a medium saucepan over medium heat. Cook onion and garlic, stirring, for 3–4 minutes or until softened. Add tomatoes and vinegar and bring to the boil. Reduce heat and simmer, uncovered, for 20–25 minutes or until thickened. Cool completely. Season sauce with salt and pepper.
  2. Preheat a chargrill or barbecue over medium-high heat. Cook beef for 3–4 minutes each side or until cooked to your liking. Cover beef with foil and set aside to rest for 5 minutes before slicing thinly. Meanwhile, cook cut side of bread for 3–4 minutes or until toasted.
  3. Top bread base with rocket, beef, capsicum and tomato sauce (see tip). Sandwich with bread top. Cut into quarters to serve.

Notes

SERVING SUGGESTION: chargrilled asparagus, drizzled with lemon juice. TIP: Store any leftover tomato sauce in an airtight container in the fridge for up to 1 week.
