Beetroot and blueberry smoothie
Vibrant in colour and flavour, this smoothie is a delicious way to get an antioxidant boost.
Cooked peeled beetroot
100 g, fresh (see tip)
Freshly squeezed orange juice
⅓ cup(s), (85ml)
99% fat-free plain Greek yoghurt
- Blend 100g cooked fresh beetroot (see tip),
- 100g frozen blueberries, ⅓ cup (85ml) freshly
- squeezed orange juice and 1½ tablespoons
- 99% fat-free plain Greek yoghurt in a blender until
- smooth and combined. Pour evenly into 2 glasses
- or travel mugs and serve.
TIP: Packaged cooked fresh beetroot is available from the fresh food section in major supermarkets.
