Vibrant in colour and flavour, this smoothie is a delicious way to get an antioxidant boost.

Ingredients

Beetroot, cooked without added fat

100 g, fresh (see tip)

Frozen blueberries

100 g

Freshly squeezed orange juice

cup(s), (85ml)

99% fat-free, plain Greek yoghurt, unsweetened

1½ tbs

Instructions

  1. Blend beetroot, blueberries, orange juice and yoghurt in a blender until smooth and combined. Pour evenly into 2 glasses or travel mugs and serve.

Notes

Packaged cooked fresh beetroot is available from the fresh food section in major supermarkets.
