Beef with hokkien noodles

When time is limited, a simple yet tasty nodle stir-fry is the answer to your dinner dilemma.


Ingredients
Beef sirloin steak, raw
600 g, thinly sliced
Garlic
1 clove(s), crushed
Red onion
1 medium, thinly sliced
Red capsicum
1 medium, thickly sliced
Mushrooms
150 g, thickly sliced
Snow peas
150 g, halved diagonally
Sweet chilli sauce
2 tbs
Oyster sauce
2 tbs
Lemon juice
2 tbs
Fresh egg noodles
450 g, (hokkien)
Fresh coriander
2 tbs, to garnish
Oil spray
1 x 3 second spray(s)
Instructions

Heat an oil-sprayed wok or large non-stick frying pan over high heat. Stir-fry beef, in batches, for 1–2 minutes or until browned all over. Transfer to a plate.

Add garlic, onion and capsicum to wok. Stir-fry for 2 minutes. Add mushrooms and peas and stir-fry for 2 minutes or until vegetables are just tender. Combine chilli and oyster sauces and juice in a small bowl. Add sauce mixture to the wok with beef and noodles. Stir-fry until heated through. Serve noodles sprinkled with coriander.
