Beef and black bean rice bowl

Stir-fries are a great winter warmer so why not enjoy this tasty bowl that’s full of goodness. Presenting all the components in segments creates texture and vibrant pops of colour.


Ingredients
Sunflower oil
1 tbs, or canola oil
Brown onion
1 medium, finely chopped
Extra lean beef mince, raw
400 g
Black bean sauce
⅓ cup(s), (80ml)
Broccoli
300 g, cut into florets
Sugar snap peas
150 g
Brown rice microwave packet
250 g
Carrot(s)
2 medium, cut into matchsticks
Bean sprouts
2 cup(s), (160g)
Fresh mint
½ cup(s), leaves
Instructions

Heat oil in a large frying pan over high heat. Cook onion, stirring, for 5 minutes or until softened. Add mince and cook, breaking up lumps, for 5 minutes or until browned. Add sauce and 1/4 cup (60ml) water and bring to the boil.

Meanwhile, boil, steam or microwave broccoli and peas, separately, until just tender. Drain.

Cook rice following packet instructions. Divide rice between serving bowls. Arrange broccoli, peas, carrot, sprouts and beef mixture over rice. Sprinkle with mint.
