Banana pudding cups

This dessert will remind you a lot of traditional, rich, banana pudding. It’s creamy, full of banana flavour, and so simple to prepare. It's a wonderful dessert, but it also makes a wonderful breakfast that you can assemble the night before. You can enjoy in the morning with a cup of coffee, or just grab it on your way out the door. The caramel extract adds a little extra flavor, but it's just as delicious without it.
12 individual, (such as digestive's)
99% fat-free plain yoghurt
Vanilla bean extract, alcohol free
¼ tsp, caramel (optional)
- Crumble 1 biscuit each into 4 x 250ml-capacity glasses.
- Cut 2 bananas into 5mm slices and divide among glasses. Mash remaining bananas in a medium bowl until smooth. Stir through yoghurt, vanilla, and caramel essence (if using). Crumble 6 biscuits into banana mixture and fold through. Divide mixture among glasses.
- Crumble the remaining biscuits over the top of banana mixture. Serve straight away or cover and refrigerate until ready to serve.
