This dessert will remind you a lot of traditional, rich, banana pudding. It’s creamy, full of banana flavour, and so simple to prepare. It's a wonderful dessert, but it also makes a wonderful breakfast that you can assemble the night before. You can enjoy in the morning with a cup of coffee, or just grab it on your way out the door. The caramel extract adds a little extra flavor, but it's just as delicious without it.


Plain biscuits

12 individual, (such as digestive's)


4 medium

99% fat-free plain yoghurt

1 cup(s)

Vanilla bean extract, alcohol free

1 tsp


¼ tsp, caramel (optional)


  1. Crumble 1 biscuit each into 4 x 250ml-capacity glasses.
  2. Cut 2 bananas into 5mm slices and divide among glasses. Mash remaining bananas in a medium bowl until smooth. Stir through yoghurt, vanilla, and caramel essence (if using). Crumble 6 biscuits into banana mixture and fold through. Divide mixture among glasses.
  3. Crumble the remaining biscuits over the top of banana mixture. Serve straight away or cover and refrigerate until ready to serve.
