Banana(s)
2 medium, ripe variety
Egg(s)
3 medium, beaten
Vanilla bean extract, alcohol free
½ tsp
Baking powder
¼ tsp
Mixed spice
¼ tsp
Fresh blueberries
½ cup(s), (80g)
Icing sugar
1 tsp, to serve
Oil spray
1 x 3 second spray(s)

Mash 1½ bananas in a medium bowl. Slice remainder of banana and set aside slices. Whisk eggs, vanilla, baking powder and mixed spice into a bowl with mashed bananas until blended.

Lightly spray a large non-stick frying pan with oil and heat over medium heat. Spoon 1½ tablespoons batter for each pancake into pan (you may need to do in batches to make 8 pancakes). Cook over medium heat until edges are set and bottoms are golden, about 1 minute. Carefully flip pancakes with a spatula and cook on other side until bottoms are golden, about 1 minute.

Serve pancakes topped with berries, reserved sliced banana and dusted icing sugar.
