Instead of granola, try making a trifle with cubes of toasted banana bread for a unique take on breakfast. Take it with you on-the-go by packing toasted bread, fruit and yoghurt in separate reusable containers, then simply layer in a serving jar when you get to work, after your gym class, or wherever you happen to be headed.

Ingredients

Avocado banana bread (WW recipe)

1 slice(s), (85g)

Orange(s)

1 medium

99% fat-free, plain Greek yoghurt, unsweetened

½ cup(s), (120g)

Instructions

  1. Toast bread in a toaster for 5 minutes, or until light golden. Cool slightly. Cut into 2cm cubes.
  2. Meanwhile, using a sharp knife, cut all the peel and white pith from the orange. Working over a small bowl, cut the orange between the membranes to release the segments into the bowl. Spoon ½ cup yoghurt into a reusable container or mason jar. Top evenly with half the orange segments and half the bread cubes. Repeat layers with remaining yoghurt, orange segments and bread cubes. Serve straight away.

Notes

TIP: Here we use orange, but you can also use whatever fruit you like. Try mixed berries, peach or mango.
