Whizz up these bite-sized banana treats so they’re ready to go as a sweet snack.
4 small, over-ripe
Shredded or desiccated coconut
18 g, (1½ tbs), crushed
1½ tbs, toasted
- Process bananas in a food processor until smooth. Divide banana puree among two 12-hole (1 tablespoon/20ml-capacity) ice-cube trays.
- Sprinkle with coconut, peanuts and pepitas. Freeze for 3 hours or overnight until firm. Serve straight from the freezer.
TIPS: To toast coconut and pepitas, toss them (separately) in a small non-stick frying pan over medium heat until just golden. Once frozen, transfer ‘bites’ to an airtight container or snap-lock bag. Freeze for up to 1 month.
