You don’t need a professional ice-cream maker to whip up your own ice-cream flavours. Use your food processor to stir pureed fruit through fast

Ingredients

Banana(s)

4 medium, frozen

Lemon juice

2 tsp

Reduced fat vanilla ice cream

500 g

Passionfruit, pulp, canned

¼ cup(s), (60ml)

Fresh strawberries

100 g, hulled

Instructions

  1. Process bananas and lemon juice in a food processor until smooth. Add ice-cream and process until combined. Transfer to a large bowl. Stir in passionfruit pulp.
  2. Pour banana mixture into a 6-cup ( 1.5 litre) capacity freezer-proof dish. Cover with foil and freeze for 3 hours or until firm. Serve ice-cream in scoops topped with strawberries.

Notes

TIP: You can freeze ripe bananas in snap-lock bags or an airtight container for up to 3 months. Alternatively, frozen bananas are readily available from major supermarkets. They are also handy for making cakes and muffins.
