You don’t need a professional ice-cream maker to whip up your own ice-cream flavours. Use your food processor to stir pureed fruit through fast

Ingredients

banana

4 medium, ripe, frozen

lemon juice

2 tsp

reduced fat vanilla ice cream

500 g

Passionfruit, pulp, canned

¼ cup(s), (60ml)

fresh strawberries

100 g, hulled, halved

Instructions

  1. Place bananas and juice in a food processor and process until smooth. Add ice-cream and process until combined. Transfer to a large bowl. Stir in passionfruit pulp.
  2. Pour banana mixture into a 1.5-litre capacity freezerproof dish. Cover with foil and freeze for 3 hours or until firm. Serve ice-cream in scoops topped with strawberries.

Notes

TIP: You can freeze ripe bananas in snap-lock bags or an airtight container for up to 3 months. They are also handy for making cakes and muffins.
