Try this delicious herbed salmon with the refreshing crunchy and slightly sweet baked fennel.

Ingredients

Skinless salmon

440 g

Fennel

2 small, cut into thin wedges

Lemon(s)

1 medium, thinly sliced

Fresh tarragon

25 g, (or one bunch)

Oil, avocado

2 tbs

Capers, rinsed, drained

2 tbs

Fresh flat-leaf parsley

cup(s), coarsely chopped

Lemon juice

1 tbs

Instructions

  1. Preheat oven to 180°C or 160°C fan-forced. Place fennel, lemon and tarragon on a baking tray and drizzle with oil. Bake for 10 minutes.
  2. Reduce oven to 120°C or 100°C fan-forced. Place salmon on fennel mixture. Bake for 30 minutes or until salmon is cooked to your liking and fennel is tender.
  3. Meanwhile, place capers, parsley and juice in a small bowl. Toss gently to combine. Serve salmon with fennel mixture and parsley salad.

SERVING SUGGESTION: green beans, plus baked kipfler potatoes (halved).
