The tasty Asian dressing packs a punch of flavour to this fish dish, with a tasty combination of ginger, garlic, chilli and coriander.

Ingredients

Ling, raw

4 medium, (4 x 150g fillets) or any firm white fish fillet

Soy sauce

2 tbs

Rice wine vinegar

20 ml, (1 tbs)

Sesame oil

2 tsp

Fresh red chilli

1 whole, finely chopped

Garlic

1 clove(s), crushed

Fresh ginger

1 tsp, finely grated

Caster sugar

½ tsp

Fresh coriander

½ cup(s)

Oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat oven to 200°C. Lightly spray a large baking dish with oil. Place the fish in the prepared dish.
  2. Whisk the soy sauce, vinegar, oil, chilli, garlic, ginger and sugar in a small bowl until combined. Drizzle half the sauce mixture over the fish. Bake for 20 minutes or until the fish is cooked through.
  3. Drizzle the fish with the remaining sauce mixture. Serve topped with coriander leaves.

Notes

SERVING SUGGESTION: Steamed green beans, carrot sticks, capsicum strips and steamed jasmine rice.
