Bacon and pineapple cheese toasties

The aroma of cheese slowly melting under the overhead heat of an oven grill is one of life’s little pleasures.

Ingredients

Shortcut bacon

125 g, chopped

White sourdough bread

160 g, (4x40g)

Light cream cheese

2 tbs

Pineapple

100 g, cut into 2cm pieces

Extra light cheddar cheese

40 g, grated

Cos lettuce

90 g, (or mixed lettuce)

Rocket

1 cup(s), (30g)

Green capsicum

1 medium, sliced (200g)

Carrot(s)

1 large, grated

Fat-free dressing

60 ml, French

Instructions

Preheat grill on high. Grill bacon for 2–3 minutes each side or until crisp. Transfer to a board and coarsely chop.

Grill bread for 1–2 minutes each side or until golden. Spread 1 side of each slice with cream cheese. Top with bacon, pineapple and grated cheese. Grill for 1–2 minutes or until cheese has melted.

Meanwhile, place lettuce, rocket, capsicum, carrot and dressing in a large bowl. Toss to combine. Serve salad with toasties.
