Transform cos lettuce with crispy bacon pieces and buttermilk, parsley and chive dressing.

Ingredients

Shortcut bacon

125 g, fat trimmed, thinly sliced

Buttermilk

¼ cup(s), (60ml)

Lemon juice

2 tsp

Fresh chives

2 tbs, chopped

Fresh flat-leaf parsley

1 tbs, chopped

Grated parmesan cheese

cup(s), (25g)

Cos lettuce

4 baby, trimmed, quartered lengthways

Instructions

  1. Lightly spray a small frying pan with oil and heat over medium-high heat. Cook bacon, stirring, for 3-4 minutes or until browned.
  2. Place buttermilk, lemon juice, chives, parsley and half the parmesan in a small bowl. Season with salt and pepper and whisk to combine.
  3. Arrange lettuce on a serving plate. Drizzle with dressing and sprinkle with bacon and remaining parmesan.

Notes

TIP: If you can’t find baby cos – or if it’s a bit expensive – you can use butter lettuce instead. You’ll need 2 large ones, leaves separated.
