Avocado, pea and feta smash
frozen green peas
¾ cup(s), (90g)
4 slice(s), (40g slices) wholegrain, toasted
reduced fat feta cheese
80 g, crumbed
2 tbs, shredded
- Bring a small saucepan of water to the boil over high heat. Cook peas for 2 minutes. Drain. Transfer to a medium bowl and set aside to cool slightly. Lightly crush peas with a fork. Add avocado and juice and roughly mash.
- Top toast with pea mixture and feta. Sprinkle with basil or mint and drizzle with oil. Season with pepper to serve.
