Ten teeny tiny minutes is all it takes to whip up this fruity crunchy topped treat.

Ingredients

Apricot, canned in natural juice, drained

1000 g, (1 kg tub) halved

Dried cranberries

18 g, (1 1/2 tbs)

Rolled oats, dry

1 cup(s), (90g)

Shredded or desiccated coconut

¼ cup(s), shredded, (20g)

Ground cinnamon

½ tsp, plus a pinch to sprinkle

Honey

cup(s), (115g)

Instructions

  1. Divide apricots among six ½-cup (125ml) capacity microwave-safe dishes. Scatter over cranberries.
  2. Combine oats, coconut, cinnamon and honey in a medium bowl. Sprinkle oat mixture over cranberries and apricots. Dust with extra cinnamon. Microwave on High (100%) for 2 minutes or until heated through. Set aside for 1 minute to cool slightly before serving.

SERVING SUGGESTION: No-added-sugar low-fat vanilla ice-cream.
