Ingredients

Wholemeal self-raising flour

2½ cup(s), (400g)

Caster sugar

½ cup(s), (110g)

Natural muesli

1 cup(s), (110g)

Egg(s)

1 medium

Canola oil

¼ cup(s), or sunflower oil

Skim milk

1¼ cup(s), (310ml)

Apple(s)

1 medium, unpeeled, coarsely grated

Pear(s)

1 medium, firm, unpeeled, coarsely grated

Instructions

  1. Preheat oven to 180°C or 160°C fan-forced. Line a 12-hole (⅓-cup or 80ml capacity) muffin tin with foil or paper cases.
  2. Sift flour into a large bowl. Add sugar and muesli and stir to combine. Whisk egg, oil and milk in a medium bowl. Stir egg mixture, apple and pear into flour mixture until just combined (do not over mix).
  3. Spoon mixture into prepared holes. Bake for 20–25 minutes or until slightly risen and cooked when tested with a skewer. Cool muffins in tin for 5 minutes before turning out onto a wire rack to cool. Serve warm or cold.

Notes

For best results, this muffin mixture should still be slightly lumpy when you spoon it into the cases. Only fill cases two-thirds full.
