Sweet apple fritters with creamy vanilla ice cream. Yum!

Ingredients

Red apple, peeled

4 medium, cored

Plain flour

¾ cup(s), (110g)

Caster sugar

2 tbs

Ground cinnamon

½ tsp

Vanilla yoghurt, 99% fat-free, no added sugar

150 g

Egg(s)

2 medium, lightly beaten

Rice bran oil

2 tbs

Maple syrup

½ cup(s), (125ml) or toffee sauce

Reduced fat vanilla ice cream

6 scoop(s), small

Instructions

  1. Preheat oven to 220°C or 200°C fan-forced. Line a baking tray with baking paper.
  2. Trim ends from apples. Cut each apple crossways into three slices. Place flour, sugar and cinnamon in a medium bowl and stir to combine. Whisk in yoghurt, eggs and 2 tablespoons (40ml) water until smooth.
  3. Heat half the oil in a large non-stick frying pan over high heat. Dip half the apple slices in batter. Shake off excess batter. Cook for 1–2 minutes each side or until lightly browned. Transfer to prepared tray. Repeat with remaining oil, apple slices and batter.
  4. Bake fritters for 12–15 minutes or until apple is tender. Divide apple fritters among plates. Drizzle with sauce and serve with ice-cream.
