Apple crumble slice

A golden crumble topping, fruity filling and cakey base combine to create this lighter version of an all-time favourite. Try it warm as a yummy sweet treat.

Reduced fat oil spread

Caster sugar

Plain flour

White self-raising flour
⅓ cup(s), (50g)
Custard powder

Canned apple slices (100% apple)
1 400g can, pie fruit
Plain flour
⅓ cup(s), (50g)

Rolled oats, dry
⅓ cup(s), (30g)
Brown sugar
¼ cup(s), (50g)
Ground cinnamon
½ tsp, plus ½ teaspoon extra

Instructions

Preheat oven to 180°C. Lightly spray a 30 cm x 20 cm lamington tin with oil. Line base and sides with baking paper, extending paper 3 cm above edge of tin on long sides.

Using electric beaters, beat oil spread, caster sugar and egg in a small bowl until light and fluffy. Stir in sifted flours and custard powder until combined. Spread mixture into prepared tin. Bake for 15 minutes or until lightly browned. Cool for 10 minutes.

Meanwhile, to make crumble topping, combine flours, oats, brown sugar and cinnamon in a medium bowl. Rub in oil spread with fingertips until well combined.

Scatter apple over slice base. Sprinkle with crumble mixture and press down lightly with the back of a spoon to smooth over top.

Bake for 20–25 minutes or until golden. Cool in pan before cutting into squares. Dust with extra cinnamon, if desired.
