Ingredients

Egg(s)

1 medium

Plain flour

2 tbs

Almond milk

¼ cup(s), (60ml) unsweetened variety

Apple(s)

1 medium, peeled, finely chopped

Apple sauce

3 tsp

Ground cinnamon

¼ tsp, (pinch) plus extra to sprinkle

99% fat-free, plain or natural yoghurt, unsweetened

2 tbs

Oil spray

1 x 3 second spray(s)

Instructions

  1. Whisk egg, flour and milk in a medium bowl until smooth.
  2. Lightly spray a large non-stick frying pan with oil and heat over medium heat. Pour half the batter into pan, swirling to coat base. Cook for 1–2 minutes or until bubbles appear on surface. Turn and cook for 1–2 minutes or until crepe is lightly browned. Transfer to a plate and cover to keep warm. Repeat to make another crepe.
  3. Meanwhile, combine apple, apple sauce and cinnamon in a small microwave-safe bowl. Microwave, covered, on High (100%) for 2 minutes or until apple is tender.
  4. Spread apple mixture over half of each crepe. Fold crepes into quarters to enclose filling. Serve with yoghurt sprinkled with extra cinnamon.

Notes

TIP: Crepe batter can be made in advance. Store, covered, in the fridge for up to 1 day. Add it: ½ tsp vanilla extract with milk in Step 1. Swap it: Almond milk for skim milk.
