Apple and pecan puddings
Green apple, unpeeled
2 medium, finely chopped
Sugar-free maple flavoured syrup
Reduced fat oil spread
20 g, melted, cooled
Granulated stevia sweetener
White self-raising flour

¼ cup(s), (30g), finely chopped
- Preheat oven to 180°C or 160°C fan-forced. Place apples in a small saucepan over medium heat. Cook, covered, stirring occasionally, for 5 minutes or until tender (they will release juice as they cook). Stir in maple syrup.
- Combine spread, milk, egg and sweetener in a bowl. Sift flour and cinnamon over egg mixture. Stir batter to combine.
- Divide apple mixture among four ½-cup (125ml) capacity ovenproof dishes. Top evenly with batter, then sprinkle with pecans. Place dishes on a baking tray. Bake for 15 minutes or until just firm to touch. Serve.
