Apple and lemon delicious pudding

Custard, citrus and fruit flavours combine in this light-as-air baked dessert.
3 medium, separated
½ cup(s), (110g)
Fresh lemon rind
2 tsp, grated
99% fat-free vanilla yoghurt, sweetened
½ cup(s), (125ml)
1½ cup(s), (375ml)
White self-raising flour
½ cup(s), (75g)
- Preheat oven to 180°C. Do not use fan-forced. Lightly spray a 1.5L (6-cup) capacity ovenproof dish with oil.
- Using electric beaters, beat egg whites in a large, clean dry bowl until soft peaks form. In a separate bowl, beat egg yolks, sugar and rind for 2 minutes or until light and creamy. Fold NESTLÉ DIET Apple Crumble Custard Yoghurt into yolk mixture with lemon juice and milk, then fold in flour and egg whites.
- Spoon mixture into prepared baking dish, then bake for 45 minutes or until pudding is golden and cooked. Stand in dish for 5 minutes before serving.
