Lebanse bread makes the perfect pizza base for a fuss-free night in!

Ingredients

Lebanese bread

170 g, (2 x large)

Tomato pasta sauce

½ cup(s), (125ml)

Red capsicum

100 g, roasted, not in oil, sliced

Semi-dried tomatoes

100 g, chopped

Artichoke hearts, canned, rinsed, drained

200 g, quartered

Black olives, drained

70 g, kalamata, quartered

Extra light cheddar cheese

1 cup(s), grated, (120g), grated

Rocket

1 cup(s), (30g) to serve

Instructions

  1. Preheat oven to 200 or 180 degrees celsiusu fan forced. Place bread on a baking tray with baking paper. Spread with pasta sauce and top with capsicum, semi-dried tomatoes, artichoke hearts and olives. Sprinkle with cheese.
  2. Bake for 20 minutes or until crisp and golden. Serve with rocket and freshly ground black pepper. Serving suggestion: Serve with a 0 points value salad. Lebanese bread is a round flat bread made from flour, yeast and water. It can be used as a pizza base, to make sandwich wraps, or torn into pieces to serve with dips.
