Anna's salmon blinis

Light cream cheese
Hot smoked salmon
99% fat-free plain yoghurt
¼ cup(s), finely chopped, plus extra chives cut into 1cm lengths to garnish
Fresh lemon rind
2 tsp, finely grated
- Process cream cheese, salmon, yoghurt, chopped chives, lemon rind and juice in a small food processor until combined and smooth. Season with salt and pepper and pulse to combine.
- Spoon mixture into a piping bag and refrigerate overnight.
- When ready to serve, cut cucumber into 15 thick round slices and spread evenly on a serving board or platter. Pipe salmon mixture in a circular motion on top of each cucumber round. Place 2 chives crossed on top of salmon to garnish. Serve.
