Ingredients

Potato(es)

200 g, peeled, diced

Tomato(es)

1 medium, chopped

Carrot(s)

3 medium, chopped

Celery

2 stick(s), chopped

Onion

1 medium, finely chopped

Cooked skinless chicken breast

250 g, shredded

Canned butter beans, rinsed and drained

1 400g can, (1 x 400g can)

Chicken stock

4 cup(s), (1L)

Fresh flat-leaf parsley

cup(s), plus extra to garnish

Oil spray

1 x 3 second spray(s)

Instructions

  1. Lightly spray a large saucepan with oil and heat over medium heat. Cook potato, tomato, carrot, celery and onion, stirring, for 10 minutes or until vegetables start to soften. Season with salt and pepper.
  2. Add stock and bring to the boil, then reduce heat and simmer, uncovered, for 20 minutes or until vegetables are tender. Add chicken, beans and parsley. Simmer for 2–3 minutes or until heated through. Serve sprinkled with extra parsley and season with black pepper.
