Just like a big ol’ hash brown in waffle form ... yes, please. Super filling and super easy, savoury waffles have become a favourite all-in-one-dish in our house.

Ingredients

Reduced carb potatoes

200 g

Egg(s)

1 medium, lightly beaten

Egg white

1 medium, lightly beaten

Mozzarella

20 g, grated

Leg ham

20 g, diced, honey variety

Baby spinach

½ cup(s), (10g)

Red onion

¼ medium, diced

Dried herbs

½ tsp, mixed variety

Oil spray

1 x 3 second spray(s)

Instructions

  1. Grate potato and place in a clean kitchen cloth. Squeeze out excess moisture. Combine potato, egg, egg white, mozzarella, ham, spinach, onion and herbs in a medium bowl. Season with salt and pepper.
  2. Preheat waffle maker on high heat. Once hot, lightly spray with oil and add batter to make one waffle. Cook for 5 minutes or until golden and cooked through. Serve with sour cream and chives, if you like (see tips).
