Ingredients

Chia seeds

¼ cup(s), (45g)

Banana(s)

1 medium, ripe

97% fat-free cottage cheese

1 cup(s), (250g)

Cocoa powder

2 tbs

Maple syrup

2 tsp, pure

Unsweetened almond and coconut milk

cup(s), (80ml)

WW Chocolate Bar, Coconut Delight

2 bar(s), chopped

Fresh raspberries

4 piece(s)

Fresh mint

4 sprig(s), to garnish

Instructions

  1. In a small bowl, combine chia seeds and ½ cup (125ml) tap water, stir and let stand for 10 minutes to thicken.
  2. Into a food processor, add banana, and cottage cheese. Blend until smooth.
  3. Add chia mix, cocoa powder, maple syrup and unsweetened coconut and almond milk. Blend until smooth.
  4. Spoon mixture between 4 x 1 cup (250ml) capacity glasses. Distribute chopped WW choc coconut delight bars, evenly, over the top of each pudding. Add a raspberry to each and a sprig of mint.
  5. Refrigerate until serving.
