Almond and cherry oat bars

You won't be able to get enough of these hearty yet sweet oat bars. The best part is that there isn't any special equipment required, not even an electric mixer! You can also have them ready to go in under an hour. Just be sure to let them cool completely in the pan so they have time to set and don't fall apart while you're cutting them into bars. Also, if you prefer, you can make these bars with fresh blueberries or with chopped peeled fresh peaches instead of the cherries. Feel free to experiment with whatever you have on hand.


Plain wholemeal flour

Quick oats

Flaked almonds

Ground cinnamon

Bicarbonate of soda

Brown sugar

175 g, fresh or frozen, pitted, halved


  1. Preheat oven to 170°C. Lightly spray a 20cm square cake tin with oil. Line base and sides baking paper, extending paper 2cm above edge of tin.
  2. Place flour, oats, almonds, cinnamon, baking powder, bicarbonate of soda and ¼ teaspoon salt in a large bowl and stir to combine. Whisk brown sugar, oil, egg whites, almond butter and vanilla in a small bowl until smooth. Add brown sugar mixture to flour mixture. Stir until well combined. Fold through cherries. Spoon mixture into prepared tin. Smooth surface with spatula.
  3. Bake for 25 minutes or until golden brown and a skewer inserted into the centre comes out clean. Cool completely in tin on a wire rack. Use the overhanging paper to lift slice from tin, then cut into 16 squares.
