Air fryer miso steak and mushrooms

Lean beef rump steak
480 g, (buy 600g), fat trimmed
600 g, mixed
3 bunch(es), halved

- Preheat air fryer to 160˚C. Combine miso paste, mirin and sugar in a shallow dish. Add steak and turn to coat thoroughly.
- Toss larger mushrooms with oil and soy sauce in a large bowl. Transfer to air fryer basket and insert basket in air fryer. Set timer for 7 minutes. Add thinner mushrooms to basket and toss. Set timer to 3 minutes. Transfer mushrooms to a heatproof bowl and cover to keep warm. Place asparagus in basket. Insert basket. Increase heat to 200°C and set timer for 2 minutes. Add asparagus to mushrooms.
- Place steak in basket. Insert basket and set timer to 4 minutes for medium. Transfer steak to a plate and rest, loosely covered with foil, for 10 minutes. Meanwhile, return mushrooms and asparagus to basket. Insert and set timer to 4 minutes. Thinly slice steak. Serve sprinkled with sesame seeds along with vegetables.
SERVING SUGGESTION: Steamed brown rice. TIP: We used a mix of shiitake, brown cup and shimeji mushrooms. Use your favourites but add any thin mushrooms for the last 3 minutes like we did.
