Air-fryer zucchini, corn and feta fritters
These easy fritters provide summery goodness in every bite, with the crisp, sweet pop of fresh corn kernels and the mild meatiness of zucchini. They’re great as either an everyday side dish or appetizer for a casual gathering. Fresh corn definitely offers the best flavour and texture, but in a pinch you can use canned.
220 g, grated
Canned corn kernels in brine, rinsed, drained
1 cup(s), (160g)
¼ cup(s), chopped
White self-raising flour
¼ cup(s), (65g)
1 x 3 second spray(s)
- Place zucchini in a clean tea towel. Gather ends of tea towel together, then twist and squeeze to remove as much excess liquid as possible. Transfer zucchini to a large bowl. Add corn and shallots and stir to combine. Make a well in centre of mixture. Add egg and egg white, and beat with a fork until lightly beaten. Beat flour into egg mixture. Fold in vegetables and feta, and season with salt and pepper.
- Line a 7.5L air fryer basket with baking paper and lightly spray with oil. Preheat air fryer to 200°C. Drop 2 tablespoonsful of mixture into basket leaving space in between each fritter. Lightly spray with oil. Air fry for 8-10 minutes, until crisp and golden. Transfer fritters to a serving plate and repeat with remaining mixture to make 12 fritters in total.
