Air-fried oaty breakfast bars
If you’re a fan of baked oats but want something quicker, then this recipe is for you. The oat mixture is cooked in the air fryer until it’s crisp on top and chewy inside, then cut into bars and topped with yoghurt and fresh berries to serve. Done in just 20 minutes, it’s easy enough for a weekday.
No added sugar apple puree
½ cup(s), (125ml)
Plain peanut butter powder
Sugar-free maple flavoured syrup
Bicarbonate of soda
1⅓ cup(s), (120g)
99% fat-free plain Greek yoghurt
⅓ cup(s), (80g)
⅓ cup(s), (55g)
⅓ cup(s), fresh, chopped, (45g)
- Whisk apple purée, peanut butter powder, syrup, bicarbonate of soda, cinnamon and ¼ teaspoon salt in a medium bowl until combined. Stir in oats. Pat the mixture into a 10cm x 15cm rectangle on a 20cm square sheet of baking paper. Lift the oat mixture on the baking paper and place it (on the paper) in the air fryer basket. Air-fry at 180°C for 10-12 minutes, until browned on top.
- Using the baking paper, lift the cooked oat mixture from the air fryer and transfer to a chopping board. Cut into 4 equal pieces. Cool slightly. To serve, spread 1 tablespoon of yoghurt over each oat bar and sprinkle with berries.
SERVING TIP: If berries aren’t in season, substitute with any fresh seasonal fruit. Try chopped peach, mango or plums, or sliced banana with a drizzle of passionfruit pulp. TO STORE: Store bars (without yoghurt and berries) in a reusable container for up to 3 days. Serve at room temperature or warm in microwave and top with yoghurt and berries.
