Wild Rice with Dried Apricots

Ingredients

Carrots

2 medium, diced

Salted butter

2 tsp(s)

Dried thyme

½ tsp(s), or 2 tsp fresh

Uncooked wild rice

1 cup(s)

Dried apricot halves

½ cup(s), diced

Fat free chicken broth

3 cup(s)

Table salt

½ tsp(s)

Uncooked white rice

1 cup(s), long grain

Chives

½ cup(s), sliced, optional

Instructions

Sauté carrots in butter until lightly browned. Add thyme, wild rice, apricots, broth and salt. Bring to a low simmer, cover and cook for 25 minutes. Stir in long-grain rice and simmer for an additional 20 minutes.

Sprinkle with chives and serve. Yields about eight 1-cup servings.
