White Bean, Citrus and Salmon Salad
Salmon and beans provide wonderful accents to the citrus in this no-cook meal - perfect for a relaxing autumn evening.
Canned white beans
15 oz, drained and rinsed
16 oz, pink, flaked with a fork, bones removed
Uncooked red onion(s)
1 small, diced
1 bunch(es), stems removed, chopped
¼ cup(s), fresh, chopped
1 tsp(s), chopped
Fresh lemon juice
½ pinch(es), freshly ground
- Combine all ingredients in a large bowl; mix thoroughly and serve. Yields about 1 1/2 cups per serving.
