Whipped edamame-avocado dip

Guacamole meets edamame hummus in this mash-up that makes it that much easier (and tastier) to get your fill of non-starchy-veggie dippers. Use any leftovers as a zippy, Points friendly spread for sandwiches and wraps.


Ingredients
Garlic
1 clove(s), large
Edamame (shelled)
1 cup(s), frozen, and thawed
Cilantro
¼ cup(s), coarsely chopped
Fresh lime juice
3 tbsp(s), from about 2 limes
Table salt
½ tsp(s)
Avocado
1 medium, ripe, peeled and pitted
Instructions

In a food processor, pulse the garlic until finely chopped. Add the edamame and pulse until very finely chopped, stopping to scrape down the sides of the bowl as needed. Add the cilantro, lime juice, salt, and 1⁄4 cup water and process until mostly smooth. Add the avocado and process until smooth.
