Warm Roasted Chicken, Grape and Apple Salad
Fresh lemon juice
2 medium, cored and chopped, one red, one green
125 gm(s), halved
2 tsp(s), chopped
Plain lowfat yogurt
1 tsp(s), and freshly ground pepper
1 cup(s), chopped
Uncooked boneless skinless chicken breast(s)
225 gm, roasted and chopped
½ tbsp(s), roasted
4 cup(s), chopped
- Put the lemon juice into a large bowl and add the apples, tossing to coat. Add the grapes, raisins, celery, chives and yogurt. Season with salt and pepper, then toss well to mix.
- Arrange the lettuce on to 4 serving plates and spoon the salad on top.
- Heat the oil in a frying pan and add the chicken, stir-frying it until crispy on the outside. Spoon onto the salads.
- Sprinkle with sunflower seeds and garnish with snipped chives.
