Ingredients

Self-rising flour

Baking soda

½ tsp(s)

Fat-free vanilla yogurt

1 cup(s)

Egg

1 large

Fat-free skim milk

2 tbsp(s)

Banana

1 medium, sliced for serving

Cooking spray

Instructions

  1. Sift the flour and baking soda into a large bowl. Whisk yogurt, egg and milk in a small bowl until smooth. Stir the yogurt mixture into the dry ingredients until combined.
  2. Lightly spray a large non-stick frying pan with cooking spray and heat over medium heat. Spoon 2 level tablespoons of batter into pan and cook for 2-3 minutes each side or until golden and puffed. Cook remaining batter to make 12 pancakes.
  3. To serve, stack the pancakes and top with a dollop of remaining yogurt and sliced banana.
  4. Serving size: 3 pancakes
