Vanilla pancakes with banana and yogurt

Self-rising flour

Baking soda

Fat-free vanilla yogurt
1⅓ cup(s)
Egg
1 large
Fat-free skim milk
2 tbsp(s)
Banana
1 medium, sliced for serving
Cooking spray

Instructions

Sift the flour and baking soda into a large bowl. Whisk yogurt, egg and milk in a small bowl until smooth. Stir the yogurt mixture into the dry ingredients until combined.

Lightly spray a large non-stick frying pan with cooking spray and heat over medium heat. Spoon 2 level tablespoons of batter into pan and cook for 2-3 minutes each side or until golden and puffed. Cook remaining batter to make 12 pancakes.

To serve, stack the pancakes and top with a dollop of remaining yogurt and sliced banana.
