Feel like you're walking the streets of Montreal eating this sandwich. Prepare the sausage and pepper mixture as instructed and serve it over couscous or rice.

Ingredients

uncooked turkey sausage(s)

½ pound(s)

uncooked onion(s)

1 medium, sweet, halved lengthwise and thinly sliced

olive oil

1 tsp

sweet red pepper(s)

1 medium, seeded and thinly sliced

green pepper(s)

1 medium, seeded and thinly sliced

balsamic vinegar

1 Tbsp

Italian bread

8 oz, about 1 medium loaf

Instructions

  1. In a large nonstick skillet, sauté sausage until browned, about 5 minutes.
  2. Add onion and oil. Sauté until softened, about 5 minutes longer. Transfer to a plate.
  3. In skillet, sauté peppers until softened, about 5 minutes. If necessary, add up to 4 tablespoons water to prevent sticking.
  4. Stir in vinegar, then return sausage mixture to skillet. Toss to combine.
  5. Split bread lengthwise, almost all the way through, and spread open. Top with sausage mixture.
  6. Close bread, then cut crosswise into 4 sandwiches.
