Uncooked red onion(s)
3 cup(s), chopped
Sweet red pepper(s)
2 cup(s), or yellow pepper, diced
- Preheat oven to 425°F. Line a baking pan with parchment paper.
- Combine potatoes, onions and peppers in a large bowl; toss well with oil and salt. Spread in an even layer on prepared pan; roast, stirring halfway through, until potatoes are browned, 30 minutes. Sprinkle with fresh thyme; serve.
