Ingredients

Uncooked sweet potato(es)

4 cup(s), diced

Uncooked red onion(s)

3 cup(s), sliced

Sweet red pepper(s)

2 cup(s), or yellow pepper, diced

Olive oil

2 tsp(s)

Kosher salt

2 tsp(s)

Fresh thyme

2 tsp(s)

Instructions

  1. Preheat oven to 425°F. Line a baking pan with parchment paper.
  2. Combine potatoes, onions and peppers in a large bowl; toss well with oil and salt. Spread in an even layer on prepared pan; roast, stirring halfway through, until potatoes are browned, 30 minutes. Sprinkle with fresh thyme; serve.
