Sparkling Orange Margaritas

Set the bottled margarita mix aside, with its excessive amount of added sugar, and make this fresher citrus version instead. Navel orange chunks are muddled with a small amount of sugar (only 1 tablespoon for 4 drinks) until the juice in the pulp and the oils in the peel are released, then mixed with tequila, lime juice, and orange-flavoured seltzer. The result is an absolutely delicious fizzy margarita that is all too drinkable. Feel free to mix everything together ahead of time, just without the seltzer; add it at the last minute for maximum fizz.

Fresh lime juice
6 fl oz, (3/4 cup)
12 fl oz, orange-flavoured, chilled
- Using a vegetable peeler, peel off 4 orange zest strips for garnish, if desired. Cut the orange into chunks and place the chunks in a small pitcher or large measuring cup. Sprinkle the sugar over the orange chunks; muddle well with a muddler or wooden spoon until you release as much juice as possible from the orange chunks. Stir in the lime juice and tequila. Scoop out the orange chunks with a slotted spoon. Stir in the seltzer. Pour the cocktail into ice-filled glasses; garnish with zest strips, if desired.
