Coat a medium pot with cooking spray and heat over medium- high. Add the onion and cook for 5 minutes, stirring occasionally. Add the garlic and cook for 2 minutes. Add the tomatoes, tomato paste, basil, oregano, sugar, salt, and crushed red pepper (if using) and bring to a simmer. Simmer, uncovered, until the sauce has thickened, 25 to 35 minutes, stirring often.

Cook the pasta according to the package directions. Drain the pasta and keep warm.

Meanwhile, coat a 12-inch skillet with cooking spray and heat over medium-high. Add the turkey and cook, breaking up the meat with a wooden spoon, until cooked through, about 10 minutes. Stir the turkey into the tomato sauce and cook for 5 minutes. Serve the sauce over the pasta and sprinkle with the cheese.
