Southwestern Corn Salad

This salad is a perfect way to spice up your veggies. Add a couple jalapeños for a little extra kick.


Ingredients
Fresh mixed greens
4 cup(s)
Canned yellow corn
15½ oz, drained
Low-fat hard or semisoft cheese
¼ oz, diced
Uncooked scallions
2 medium, chopped
Red bell pepper
1 medium, diced
White wine vinegar
2 tbsp(s), or fresh lime juice
Cilantro
1½ tbsp(s), minced
Table salt
¼ tsp(s)
Chili powder
¼ tsp(s)
Olive oil
1 tsp(s)
Red pepper flakes
⅛ tsp(s)
Instructions

In a large bowl, combine greens, corn, cheese, scallions and pepper.

In a separate bowl, whisk together remaining ingredients for dressing. Pour over salad, and toss well before serving.
