You’ll never guess that protein-packed silken tofu is the secret ingredient in this luscious mac and cheese. Kids and grownups alike will gobble this one up!

Ingredients

Uncooked whole wheat elbow macaroni

12 oz, or regular macaroni

Silken tofu

12 oz

Low-fat shredded cheddar cheese

2 cup(s), 2% fat

Low-fat milk

2 tbsp(s)

Regular butter

1 tsp(s)

Light sour cream

1 tsp(s)

Dijon mustard

1 tsp(s)

Table salt

1 tsp(s)

Garlic powder

½ tsp(s)

Black pepper

pinch

Cayenne pepper

1 pinch

Instructions

  1. Cook macaroni according to package instructions in salted water. While cooking combine all other ingredients in a food processor or blender until smooth. When macaroni is done drain well and return to warm pan. Add tofu-cheese sauce and heat over low heat until gooey and smooth. Serve immediately.

Notes

This dish can also be made ahead and combined in a cooking spray lined 2qt casserole. Just cover and bake at 350 for 20-25 minutes until bubbly.
