Silken Tofu Mac and Cheese
uncooked whole wheat elbow macaroni
12 oz, or regular macaroni
low-fat shredded cheddar cheese
2 cup(s), 2% fat
light sour cream
- Cook macaroni according to package instructions in salted water. While cooking combine all other ingredients in a food processor or blender until smooth. When macaroni is done drain well and return to warm pan. Add tofu-cheese sauce and heat over low heat until gooey and smooth. Serve immediately.
