Canned pinto beans
15 oz, rinsed and drained
Fresh lime juice
- Coat a small nonstick skillet with cooking spray; heat over medium-low heat. Add onion and salt; cook, stirring often, until onion is very soft, 5-7 minutes. Stir in garlic and cumin; cook 30 seconds. Stir in beans and water; cover and simmer until very soft, 5 minutes. Stir in lime juice.
- Puree beans in a blender or food processor until creamy, adding more water as needed.
