Raspberries
½ cup(s)
Fresh mint leaves
1 tbsp(s), chopped
Lime zest
½ tsp(s), finely grated
Fresh lime juice
1 tbsp(s)
Plain or unflavoured seltzer
⅓ cup(s)
Raspberry liqueur
1½ fl oz
Instructions

In a small bowl, crush the raspberries with a fork. Stir in the mint and lime zest. Spoon the mixture into 4 (2-oz) ice pop molds.

In a small bowl or cup with a spout, stir the lime juice, seltzer, and liqueur. Pour the mixture over the raspberries in the molds. Freeze for 6 hours or overnight until frozen solid. Carefully release the ice pops from the molds to serve.
