- Lightly spoon the flour into a dry measuring cup; level with a knife. In a large bowl, combine the flour, baking powder, and the next four ingredients, and stir well with a whisk.
- In another bowl, combine the egg, brown sugar, oil, pumpkin, and buttermilk in a bowl, and whisk until blended. Add the pumpkin mixture to the flour mixture and stir until well combined.
- Coat a waffle iron with cooking spray and preheat it. Spoon about 1⁄4 cup of batter per waffle onto the hot waffle iron, spreading the batter to the edges. Cook until the steaming stops, 5 to 7 minutes. Repeat with the remaining batter.
