Keep your kitchen cool by “baking” these hearty whole-grain cookies on a pizza stone on the grill. To get an ideal cookie shape, you’ll need to flatten the dough mounds on the stone. Take a spoon in a glass of water out to the grill, and use the back of the damp spoon for this purpose (or use your damp fingertips). If you don’t have a pizza stone or a grill, you can bake these cookies in a 375°F oven.

Packed brown sugar

Egg

2 large, lightly beaten

Powdered peanut butter

Uncooked quick oats

Instructions

  1. Place a pizza stone on a grill rack. Close the grill lid, and heat the grill to medium (about 375°F).
  2. In a large bowl, whisk together the sugar, vanilla, salt, and eggs. Add the powdered peanut butter and oats; stir until well combined. Drop half of the dough by rounded 1 tablespoon-fuls onto the pizza stone. Using the back of a damp spoon or damp fingertips, gently flatten each dough mound. Close the grill lid; grill until the cookies are lightly browned on the bottom and set on top, 9 to 11 minutes. Remove the cookies from the grill. Repeat the process with the remaining dough.
  3. Serving size: 1 cookie
